French Onion Soup
1 Tbsp. olive oil
3-4 medium onions, sliced
1 quart beef broth
1 Tbsp. Worcestershire sauce
croutons and cheese for topping, optional
Heat a soup pot over medium heat, and add olive oil. Add onions, and cook down for about 45 minutes until onions are soft and light brown, stirring occasionally. Add the beef broth and Worcestershire sauce. Bring to a boil, then reduce heat and simmer for a couple minutes. Put in an oven-safe bowl, top with a crouton and 1 oz. cheese (I like cheddar jack), and put under the broiler for a few minutes to melt the cheese.
