VEGAN RECIPE REVIEW: Flourless Peanut Butter Cookies


Normally, I don't avoid flour--so it wasn't the "flourless" that drew me into this recipe. I just happen to love coconut in cookies, and the ingredients here are some of my favorites: coconut, chocolate chips, peanut butter, and oats. How could it be anything but delicious?!

Oh She Glows is a super popular vegan blog, and while I like to try to pick recipes from lesser-known sites, this recipe had great reviews and it looked like something the whole family would really like. (Even Eli, who doesn't like "vegan food".)

The recipe I chose this week is called Flourless Peanut Butter Cookies by Oh She Glows. (I'll link to it again at the end of the post.) And as usual, I made the recipe as-written, with the exception of the fact that I did not use gluten-free oats--I eat gluten so I never buy gluten-free oats). The ingredients are similar to what you would typically expect of a cookie (minus eggs and butter!): ground flaxseed, water, shredded coconut, rolled oats, brown sugar, baking powder, salt, non-dairy chocolate chips, natural smooth peanut butter, vanilla extract, and maple syrup.

First thing's first: Preheat the oven to 350 F. Then line a large baking sheet with parchment paper.


Then, it's time to make the flax egg. This is the "glue" that holds the cookies together like a chicken egg would do. You mix the ground flaxseed with water and let it sit; and eventually, it forms a more gel-like texture.

Next, you mix the coconut, oats, brown sugar, baking powder, salt, and chocolate chips to a mixer. This is where I had a little problem...

The recipe calls for 1/2 cup packed brown sugar (or 68 grams). I like recipes that include the weight of the ingredients because I like to measure that way for accuracy. When I packed the brown sugar into the half-cup measuring cup, the weight was WAY more than 68 grams. So I measured the 68 grams into the half cup measuring cup and this is what it looked like:


It was a HUGE difference. So I'm not sure if the recipe meant a packed 1/4 cup and the recipe had an error, or maybe that's just what a half-cup looks like when you weigh it out. I went with the 68-gram measurement instead of packing the half-cup and hoped it would turn out!

Thankfully, there was no problem with the peanut butter. It said 1/2 cup (or 125 mL) and it was spot-on when I measured/weighed:


Anyway, first you mix the dry ingredients (plus the chocolate chips, which I found a bit odd--usually they are added at the end--but I went with it).



Then you mix the wet ingredients together--the flax egg, peanut butter, vanilla extract, and maple syrup. It makes a thick, sticky-looking peanut buttery deliciousness that I could probably eat right out of the bowl. 


Once that is smooth, you stir the peanut butter mixture into the oat mixture and mix until combined.



Then you drop the cookies onto the parchment paper-lined baking sheet. Since the cookies don't really change shape in the oven you are supposed to flatten them a bit.


The recipe said I'd get 13 cookies, but I got 14. Bonus! Before and after baking:


I let them cool completely before eating one and holy cow--they were so delicious! 


They are very chewy and dense, and a tad bit sticky (in a good way). The peanut butter is perfect--not too much, not too little. In fact, all of the ingredients seemed to be the perfect proportions--including the brown sugar. So I would definitely measure that by weight and not volume.

Jerry, Noah, Eli, and Eli's girlfriend were all here and they tried them as well. They all loved them--even Eli! They absolutely don't "taste vegan"--you could serve them to a room full of people and nobody would ever know that there aren't any eggs or dairy.

Overall, if you like chewy cookies with a variety of textures (and peanut butter), you'll probably like these. Adding nuts would be great, too, to give them some crunch! It makes a relatively small batch, so you don't have cookies lying around for days to keep grabbing when you walk by.

These cookies are a winner, and I will definitely make them when I bring a dessert to share somewhere.

Red Lights

I hate to do this sort of non-post post (where I don't really write, but post pictures or memes or whatever instead), but sometimes I have days where I really need to take a break from writing. Today is one of those days; I just feel extremely stressed out.

There are times in my life that seem so easy--it feels like hitting all the green traffic lights on a long drive through a city while your favorite song is playing on the radio. Lately, I feel like I've been hitting all the red lights and the radio is playing nothing but ads. I'm sure you know what I'm talking about--where nothing seems to go right for a while. (Yes, I know I'm probably being dramatic and I'm trying to focus on the positive side of things, but I'm having a very hard time doing that right now.)

Anyway, I don't want to make this a downer post (I hate writing those!). Instead, I caught up on my random facts calendar--I was super far behind--and I found a lot of very interesting ones, so I thought I'd post those today. Hopefully you'll find them as interesting as I did!











Well, tomorrow is my last day before cross country starts on Monday and I haven't even put together a plan--so I need to get to work on that!

Friday Night Photos

Man, this week has gone by so fast! I have been up to my eyeballs in construction work for the bedroom and bathroom. Lucky for anyone reading this, I won't be posting more pictures of it this week ;)  It's killing me not to go in there and start framing the closet walls (which I have no idea how to do!) and install the bathtub/shower (also don't know how to do). I can't do the cosmetic stuff (flooring, painting, trim, etc) until everything else is done.

This week, I tried to take a lot of pictures--and several of them are from the pets. But I can't help it! They are too cute.

This morning, I went to some garage sales with my parents (I haven't gone in YEARS--it was so fun!) and one of the things I bought was this cat bed. You can see Duck took it over immediately. Not at all surprising.


 

I fell asleep while Jerry and I were watching a movie and Duck decided to come sleep by my head. I miss when he used to do that every single day! Now it's more like once a week. But I really love it when he does.


For some reason, Chick decided to come lie on my lap as well (this was actually before Duck did). Did I ever mention how much I love cats? ;)




Phoebe is still hanging in there. She's been eating less and less and she's starting to look greasy again, but as long as she seems happy, we'll just keep doing what we've been doing.



It's shedding season, and you can see just how disgusted Joey is that I waited so long to brush his undercoat, hahaha. He looks so sad! But honestly, he was thrilled. He LOVES getting brushed and I'm always amazed at how much fur comes off of him. I use the Furminator brush and you can see the big pile of fur next to him. (Here is an affiliate link to the Ferminator on Amazon--it is the BEST brush to get the undercoat of dogs!)



Even if you're not a cat person, you have to admit this is adorable. I wish I could be that comfy!




Noah has really gotten into disc golf with Jerry, which I think is awesome. Eli hasn't shown any interest in it, but he's been regular-golfing a LOT this summer. (If you ever want to get Jerry all riled up, call disc golfing "frisbee" and watch his reaction--hahaha!)



Jerry insisted on taking my picture outside of The Container Store--where we went for our 19th wedding anniversary, hahaha. 



We spent probably two hours in there looking for containers for our closet (ones that didn't cost an arm and a leg). We didn't buy each other gifts, so this was a combined gift to each other. An organized closet! Just what we always imagined for our 19th anniversary. Next year for our 20th, we really do need to plan something nice ahead of time. Maybe a weekend getaway.



And the next day, we busted out the containers and got to work folding and organizing. It's not totally done (can you believe we didn't get enough containers?!) but it'll be nice to have it done soon.



My neighbor has a garden like nothing you've ever seen, and lucky me--she gives me a lot of her extra harvest! Recently, she gave me several eggplants--they're mini-sized, which is perfect. I hoped to love eggplant, and I tried it, but I just don't care for it. I told her I'd try them again though.




I thought this was hilarious. You know how channels will make suggestions for you to watch? Well, this was one that they suggested for me:



I happen to love pesto sauce, but it's not vegan unless you swap out the parmesan. However, I love olives, and when I saw this vegan black olive pesto sauce, I just had to buy it. I haven't tried it yet, but maybe I'll have some with pretzels later for a snack.



The township had our road repaved! Not exciting for the most part, but I am thrilled. It'll be much better for running and/or riding bikes.



Yesterday morning, I spent some time making pre-made mixes to keep things simpler when I cook. I made Nacho Popcorn Seasoning, yellow cake mix (for one-serving mug cakes!), a seasoning for scrambled tofu (like eggs), a vegetable bouillon powder, vegan mac and "cheese" powder, and one (not pictured) vegan parmesan. I made a mug cake today for all of us to try and it was SO good! Something to keep in mind when I want to pig out on sweets. It was very satisfying. Even Eli liked it!



In the hopes of winning over my mom with tofu (and *really* hoping my dad would at least take a bite of hers, I made my mom a salad with avocado, tomatoes, cucumbers, and lemon pepper tofu. Then I made a tahini dressing. It looked fantastic! I hope she liked the taste of it; she and my dad are used to the food they've always eaten, so it's hard for them to try new things with an open mind.



I ordered some more nutritional yeast from Amazon (it's amazing how fast I go through it!) and the seal looked a little weird. I didn't open it, but I wrote Amazon and got a refund for it. They told me just to keep the package, so I ordered a new one. Today, I opened both because I wanted to compare. Well, the one on the left was the one with the wonky seal. So clearly, it had gone bad. It's not supposed to look like that.



After listening to the podcast episode about sprouting from Plant Powdered People, I just had to give it a try. Nothing fancy; I just bought the mesh tops for the mason jars (Amazon affiliate link) and a bag of mung bean seeds (also on Amazon). First I had to soak them, then drain and let rest at an angle (enough for the water to be released but also so that air can get to it). Then each morning and evening, I water them (I don't even have to take the lid off) and then flip it back over to drain. The top picture was on Tuesday. The bottom was today--that's how fast they grew! 



And finally, today is the 13th year anniversary of when I started losing weight. I cannot believe it's been 13 years since that first picture was taken. I remember exactly what I was thinking when I saw the photographers taking pictures. Looking at my neck still blows me away! I think I lost over four inches in my neck alone.


This morning, I was feeling kind of brave and I took a few pictures of me in bra and underwear. I was thinking about posting (no filters, no photoshop, etc--I never alter my appearance that way) a picture of what a 40-year old mom, having had two large babies, having lost 100+ pounds, having had surgery to remove excess skin, and who still has large amounts of excess skin. I would be setting myself up for mean comments, but I think it might be helpful, too. We'll see if I'm brave enough to actually post it!

Running Recap: August 12-18, 2022


It's kind of pointless to continue calling this the "Return to Running" recap like I was before, because I pretty much feel like I'm starting over from square one! I hadn't run in a few months prior to Monday.

I don't know what possessed me on Monday, but the weather was a little bit fall-like and I had the urge to go run. Before I could talk myself out of it, I hurriedly threw on some running clothes and my Garmin and headed out.

I know I always have some sort of plan for running (whether I follow it or not) and I usually have an agenda, whether it's lowering my heart rate, getting faster, or running farther. 

Well, I'm stating right now that I have no agenda. My biggest goal is to run three miles, three times a week until I'm confident that I'm running regularly. No matter the pace or time or heart rate, my only goal is to hit three miles. That takes a lot of pressure off! And since I'll be coaching cross country again this year, I want to be able to keep up with the kids.

I discovered a cool new feature on the Garmin Connect app that allows you to add your runs' stats to your photos. I figured that would be super efficient on my running recap posts. 

On Monday, I ran outside. It felt hard! My legs were tired and my throat got very dry to the point that it hurt to swallow (I definitely need to drink water before I leave the house to run). I did one of my favorite routes and I was happy that I managed to do pretty well! It was hard, but do-able.


I was actually really surprised by my pace--I was sure I'd be logging 13-14:00 minutes per mile. Still, it wasn't easy!

My second run was today. I was tempted to skip it, but when I was complaining to Jerry that my stomach just doesn't seem to be shrinking right now, he reminded me that I was in my best shape when I was running. That kind of lit a spark in me--I am eating really well and getting my shit together (I was hit with bad news a few times over the last three weeks and it's been emotional). I think that getting back to running will help me to feel a lot better about things (or at least forget for a while).

Today, it was miserably hot outside, so I chose to do the treadmill. There was quite a bit of dust on it! The first mile felt like *forever* and I waited and waited to hear the beep that signaled a mile. Finally, I looked at the Garmin and saw that I'd run 1.32 miles--I guess my auto lap wasn't turned on (usually I get a notification at each mile).

I varied the speed quite a bit as I was running--faster and slower--to make it feel hard but not TOO hard to where I wouldn't want to do it again. I was so hot when I was done! But I'm really happy that I'm still able to run three miles. I honestly wasn't sure if I could.


I'm curious to see if eating vegan has any effect on my running. Jerry went for a run today and he said it was one of his best runs yet and he wonders if it's because he's been eating vegan for about three weeks now.

Okay, so if I can just keep on running, I'd like to start posting my weekly recaps again (Wednesday through Thursday, so today will mark the end of this week). My body feels really good about it and it helped me to take my mind off of everything for a little bit. Maybe it'll even help me get back into reading! I used to read on the treadmill, but I haven't finished a book in a long time because I just don't take the time to read anymore.

Anyway, I did not only one, but TWO runs this week and I feel great about that :)

Wednesday Weigh-In: Week 64


Well, things didn't actually go as planned yesterday. It never does! Jerry and I should have made a concrete plan for our anniversary, but when it came time to do something, we had no idea what we wanted to do. Finally, at around 5:00, we decided to drive an hour to The Container Store.


Yes, Friends, we went to The Container Store for our anniversary. The joys of being married for 19 years!

Since we're making all these changes to the bedroom and bathroom, we thought it would be a good time to organize the closet. It's gotten cluttered (not just because of the bedroom mess, but because of too many clothes.

We were in total sticker shock when we went inside and saw that a simple clear plastic container was $25-40. We figured we wasted our trip up there, but then we found some that were far less expensive but still felt like decent quality and we found the sizes we needed. When we got home, it was too late to do anything else, so we just watched a movie and went to bed.

Today, we spent the afternoon folding and organizing clothes into the new containers. We'd thought we bought too many, but we far underestimated how many we'd need. I even got rid of some stuff, but it didn't seem to make a dent. We either need to get some more containers or have half of a neatly organized closet or just get rid of a lot.

Our bathroom doesn't look much different, except that they started building the frame for the walls to surround the shower. Brian has a LOT on his plate right now, so I'm not sure when we're going to start moving along. Jerry and I might be able to do some of it, so I'll have to talk to Brian to figure out what needs to be done.

Anyway, onto the weigh-in! I put the scale back in the bathroom for now, so I was able to weigh-in this morning. But naturally, for my Wednesday Weigh-In selfie, I had to find a spot to prop the mirror up.

I had another great weigh-in on the scale...


I was at 137.0 this week, which is down from 139.8 last week. I am stunned at how quickly I've dropped the last 4-5 pounds. And now I'm only four pounds away from my actual goal weight! And, reaching 137.0, means I've lost exactly 60 pounds since May of 2021. I'm thrilled with that! My total weight loss is back to 116 pounds. It's hard to believe when I think about it. I still feel like I look the same as I did early last year. It's bringing back memories of when I first dropped the weight in 2009-2010.

I've noticed a huge difference in my clothes, just in the past couple of weeks. The jeans I bought that just fit me recently are now too big (unless I alter them). I'd forgotten how quickly your body gets smaller as you get close to goal, even if your weight only goes down a couple of pounds. It really makes a big difference!

I've been taking pictures of my food so I can do a "what I've been eating" post--a few people have asked me about that--so once I get a few more pics, I'll put that together.

I went for a run yesterday! But I'll write about that later. Until yesterday, it had been a while since I went for a run. My plan is to go again tomorrow.

I can't remember if I mentioned this here or not (I think I did) but Renee and I are coaching cross country again this year. Practice starts on Monday! I really need to run regularly so that I can keep up with the kids on the team ;)  I also need to come up with my game plan as far as coaching the kids. I'm nervous and excited at the same time. I just hope it goes well.

Transformation Tuesday #82


Happy Transformation Tuesday! Since today is Jerry's and my 19th wedding anniversary, I thought it would only be appropriate to post a photo of us from then and now. The picture on the left is from the morning after our wedding. We were holding our marriage license (I can't even remember the steps to that whole process) and we made a last-minute decision to drive down to Cleveland for a few days. (We didn't plan a honeymoon because we just didn't have the money to take a trip. Look at us! We were CHILDREN when we got married. Haha! I was 21 and he was 22.)

The second picture was from a little over a week ago when we dressed up a bit to go to a friend's birthday dinner. It's crazy to think of all of the things that have happened in the last 19 years... the most important being Noah and Eli!


 Okay, let's get on to the readers' transformations for this week...



My good friend recently had a baby and moved into a new home. As a housewarming gift her boss came over and planted a garden for her in the back yard. My friend is a city girl who has never grown ANYTHING! She was very nervous about having the responsibility of caring for the garden but she watered regularly. And 2 months later it was such a fun “harvest” for her!!!!  I was very impressed.

Stacy, I love this little story! What an amazing gift for a boss to do for an employee--that is totally going above and beyond and it sounds like it was very much appreciated. This is kind of a different transition, but I thought it was cool nonetheless. Every year my family takes a lake vacation to Spofford lake in Chesterfield, New Hampshire. We went as kids in the late 80s/early 90s and now we go with my parents, my brother, and our spouses and kids. The "before" picture is of my son in 2014, checking out the kayak for the first time with my dad (side note: he did NOT actually go out in the kayak, they were on shore for the picture, which is why he has no life jacket on).

Fast forward eight years to this summer, when he was able to actually paddle the kayak around the lake all on his own. He had such a great time! They aren’t lying when they say the days are long but the years are short.

Megan, I love everything about this! First, that you have such a fun tradition with your family. I used to go to a cabin on a lake with my family every year when I was little and we loved it. Also, I love the look on his face as a baby--he looked so delighted to be sitting there. How proud he must feel to be able to do that on his own now! The Story of My "Last Meal"

I was going to write a "cute" post about Jerry and me, considering our 19-year anniversary is tomorrow, but I feel like I've done that probably every year. So, I thought I'd tell the story of our sixth anniversary in 2009--we had big plans for the following day to get serious about losing weight. We wanted our anniversary to be the start of a fresh new beginning for us both.

We set the date of our new journey to August 17th, 2009--the day after our anniversary. So what did we do on our anniversary? Well, I'm sure many of you are familiar with "the last meal" before starting a weight loss diet. Might as well eat it all for dinner the night before! (Not saying that's what we should do, but I'm pretty sure most people have done that.)

We chose for our last meal to be at Red Lobster. We used to go there a lot when we were dating; the movie theater was only a block away, as was Walden's (an old chain bookstore--remember them?). We liked to eat dinner, then browse at Walden's until the movie was getting ready to start, and then we'd head to the theater. There, we would get a large popcorn, pretzel bites with cheese sauce, and a large sprite + lemonade (love that combination). We did this way too frequently.

If you're wondering, I always ordered the coconut shrimp with a coconut sauce that could have eaten straight from the bowl with a spoon. It was so good! But that evening, considering it was our "last meal", I ordered all you can eat shrimp. Shrimp pasta, coconut shrimp, and shrimp scampi. And you'd better believe that I ate every last bite! Including my caesar salad and several biscuits.

We both weighed the same that morning--253 pounds--and I thought it was funny that we had the same starting weight. Our plan was to do the Weight Watchers 1-2-3 Success program (which focuses on calories, fat, and fiber).

This was taken a few days before we started...


The next morning, all of our motivation had waned. We agreed to start other time (Ha! How many times have we said that over the years?). But I was still feeling like I *needed* to lose the weight. Noah was starting kindergarten and as kindergartners do, he spoke the truth. Not with any sugar-coating, not with ill intentions, not out of anger... he just stated the fact that "My mom is fat" to a couple of kids at school.

Hearing him say that broke my heart. Not because my feeling were hurt, but because he noticed that his mom is different and felt the need to explain it. I just couldn't get that out of my mind. I wanted Noah to be proud of his mom as he went through school.


Coincidentally, on August 18, my sister called me to ask me if I'd start doing Weight Watchers with her. Back then, I had ZERO self-esteem and I was constantly intimidated by people who I thought were better than me--which was most people. My sister always intimidated me because she just seemed "perfect". She is also eight years old than me, so I'd wanted to be like her the whole time I was growing up. She's outgoing, assertive, determined, very active, and social. Basically everything that I wasn't.

However, we had started talking quite a bit after Noah was born (I'd asked her to be in the delivery room with me and I think that may have made her feel closer to Noah--and me). So when she called that night in August and asked me to do Weight Watchers with her, I felt too intimidated to say no, even though I really wanted to. I wanted her to like me! I agreed to start the following morning.

August 19th, 2009 - The very last day I saw 253 pounds on the scale. My sister called the first few days so we could talk about how we were doing, and I was so nervous to let her down that I made sure to stick with the program. The first few days were terrible. I hated it and I wanted to quit but I didn't want to let Jeanie down. So I kept going.

Jerry, however, had decided that the timing just wasn't right for him. He didn't have that determination that I felt. I told him that I was going to do it and he could join me if he wanted, but if not, that's fine too. I said I was going to be making healthier dinners and he said he was cool with eating them. The kids were young enough (three and five) that they didn't really get many choices. They just ate what I gave them.

I continued to lose weight, and by January I'd lost about 40 pounds I think. Jerry was inspired and decided his starting date was going to be January 1st, 2010. At that point, I had gotten into a great routine and I was more comfortable making recipes my family would enjoy. Jerry just ate what I gave him, so he likes to say he lost weight "by default"; but he put in a ton of work, too.

That year, 2010, was a big game changer for me. I started running in the early spring and then after my half-marathon in May--I walked with my sister--I started running three times a week. I continued with counting WW Points and I eventually switched the to Winning Points plan. I liked both plans, but once you figure out how to cheat the plan, you've got to find another plan. So, I settled on counting calories.

Jerry didn't really track his points (at least not regularly) but he just ate the food I made and he surpassed me in weight loss (frustrating that guys can do that!). We both started looking better than ever, so it was exciting to see us reach our milestones.

And we eventually reached our goal weights! We were both so proud of all of our efforts paying off. I was still running and getting more and more interested in it, so I continued with that. And of course, continued counting calories.


I won't go on to the rest of the 13 years, because my story is all over my blog, but I don't think I ever told the story of my "last meal". I haven't been to Red Lobster after that; it just brings back bad feelings of binge eating.

So, for our anniversary tomorrow, we think we'd like to take a picnic to Elizabeth Park; we used to go there for picnics every once in a while we were dating, and then we took the kids a few times as well.

There are some really pretty spots for taking pictures and I'd like to get a photo on the bridge my parents had their wedding pictures taken. (Hopefully it's still there!)  I'm going to have to pick out tonight what kind of vegan lunch I'll pack; but the best part is that vegan food is so much easier to prep than meat and dairy.

After that, we may go see a movie. It sounds cliché, and it is, but that was "our thing" when we were young. Jerry's been dying to see the new Top Gun movie, so maybe we'll see that. With our bedroom being what it is right now, we'll probably just come home and chill. Sexy time is impossible when you have a room that echoes through the whole neighborhood! Hahaha. Before I repair our walls, I'm going to add foam insulation between each stud in the wall. That should make it significantly quieter.

Tomorrow is Transformation Tuesday, but I still only have one that is ready to post. So, unless I have a couple more by tomorrow morning, I may have to post something different. I have to get the post done in the morning so I can spend the rest of the day with Jerry.

Deep Thoughts with Jerry #3


I still laugh every time I see that picture of Jerry! It couldn't be more perfect for a "deep thoughts" post. (Read: silly icebreaker questions.)  Today's post is brought to you by Jerry...

What is one important skill every person should have?

Patience. Without question. Even though I just asked Katie if she considers it a skill (while she told me to hurry up typing this), I always think of it and try to practice it when driving. Nothing makes me want to burn the world more than someone pulling out in front of me when there isn’t a single vehicle behind me for miles! Even now, as I’m writing about it, I’m getting all worked up.

I totally love the outdoors. I love camping and hiking. I haven’t done any of that in forever, I can’t remember the last time I camped. Now, when I am out in the sticks, I’m disc golfing. Most of the courses I go to are in metroparks or state lands. Being outside seems so refreshing. Sure, there are bugs but there are sprays for that. 



What famous animal movie character do you like the most?

I love cartoons. I grew up on Looney Tunes, Tom and Jerry, and Tex Avery animations. As an adult, I love the Pixar/Dreamworks cartoons. If I had to pick one it would be Potato Head from Toy Story. The conversations between him and Mrs. Potato Head are hilarious to me.

When we are watching a show where someone just has these ridiculous eyebrows I am always quoting Mrs. Potato Head (in her voice) when she says "I’m packing an extra pair of shoes, and your angry eyes, just in case." Katie loves it and we both usually just start laughing.


What was one new experience you tried that was completely unknown or uncomfortable to you at the time you tried it?

Insanity. [Workout videos] Sure, I’ve run before but when I started Insanity I was completely intimidated. I never worked out to any sort of video. I always just thought it was for women because when I was growing up, my mom, like every mom in the the 80s and 90s, had a wide variety of Denise Austin videos. I heard of Insanity from some friends at work so I decided to give it a shot. It’s the most difficult thing I have ever done, but I couldn’t stop doing it. The results were undeniable and totally worth it. 


How do you find time to exercise with your schedule? (a question from a reader)

Ha! It’s very difficult. Being on night shift for the last couple years I would try to run on the treadmill when I would get up in the afternoon. Or, I would walk out to the garage and work out to Insanity. However, life gets in the way every single time. School, baseball games, family functions, and just straight up fatigue would always put a halt to my plans. I realize that they’re all excuses and I should take some time to exercise but at the time I just can’t get up the drive to stick with it. 


Katie here now. I love that Jerry mentioned the 'angry eyes' and Mrs. Potato Head from Toy Story. The video I posted above shows a "blooper" from Toy Story 2 when Mrs. Potato Head was packing Mr. Potato Head's--butt? Her voice makes it hilarious and when Jerry mocks it, I can't help but laugh.

Jerry feels special when doing these "Deep Thoughts" posts, so hopefully they are at least entertaining ;)  I have to say, I was SHOCKED when I read that his favorite outdoor activity is camping! I had absolutely no idea and now I feel terrible that we haven't done it since--2009? Camping is probably my least favorite way to spend time, but I would have made it a point to do it at least once every summer if I'd known!

Jerry's and my 19th anniversary is on Tuesday, and we want to do something but we haven't made any definite plans (even though we've had 19 years to plan it). If anyone has suggestions, I'd love to read them! (As long as it's not camping... haha!) And of course, if you have questions for Jerry, I'm sure he'd love to answer them in another "deep thoughts" post :)
