RECIPE: Pumpkin Pie Oatmeal



I used to be obsessed with oatmeal, and was always making different concoctions. This was one of my favorites--it tastes just like fall! Even though it's now winter, it's still a perfect bowl for a cold day.

Here is a printer-friendly version!

Pumpkin Pie Oatmeal

28 g. old-fashioned oats (about 1/3 cup)
1/3 cup milk
1/3 cup water
1 1/2 tsp. brown sugar
10 g. raisins (or dried cranberries are good, too!)
dash of salt
dash of maple extract (or maple syrup)
a whole lot of cinnamon (about 1/2 tsp)
dash of pumpkin pie spice (about 1/8 tsp)
1/3 cup canned pumpkin

Combine all (except pumpkin) in a small pot on the stove and bring just to a boil. Reduce heat and simmer while stirring for a couple of minutes until thickened. Stir in the pumpkin and heat through.

Makes one serving.

This is delicious topped with toasted walnuts, too!
